Pizza with figs and Parma ham

Serves 4: 1 roll of pizza dough • 8 fresh figs • 4 slices of Parma ham • 1 mozzarella ball • 3 tbsp. crème fraîche • 1 handful of arugula leaves • 1 tbsp. liquid honey • 1 tbsp. olive oil • freshly ground pepper
Preheat the oven to 220 °C (gas mark 7-8). Roll the dough out on a baking tray lined with baking paper. Spread the crème fraîche on top of the dough.
Wash the figs thoroughly and dry them. Cut them into quarters.
Cut the mozzarella into small cubes and arrange everything on top of the dough. Drizzle with honey and bake for 20-25 minutes until golden brown.
In the meantime, cut the slices of ham into strips. Spread them on top of the pizza when it comes out of the oven. Add the arugula leaves, a drizzle of olive oil, a turn of the pepper mill and serve immediately.
