Thai-style Steak Tartare

Serves 4: 500 g very fresh beef fillet • 60 g unsalted blanched peanuts • 1 small red onion • 1 tbsp. fresh mint • 1 tbsp. fresh coriander • 20 g grated lemongrass • 2 cm fresh grated ginger • 1 small red chilli pepper • 10 cl soy sauce • juice of 1 lime • 2 tbsp. peanut oil • 2 tbsp. Nuoc mâm • ground pepper
Using a sharp knife, cut the beef into small cubes. Dry fry the peanuts in a frying pan for 1-2 minutes, then coarsely crush them. Peel and finely chop the red onion. Wash, dry and halve the red chilli pepper. Remove the seeds and dice it finely.
In a large bowl, mix together the soy sauce, nuoc mâm, oil and lemon juice. Add the onion and the chopped chilli pepper as well as the lemongrass and grated ginger. Mix together and add the meat, chopped mint and coriander. Season with pepper and stir. Adjust the seasoning, then arrange on plates using a cookie cutter to shape. Sprinkle over the crushed peanuts and serve immediately.
